Restaurant Kitchen Revenue per Available Unit Calculator

Track how efficiently your restaurant kitchen turns scheduled capacity into revenue. This calculator divides net revenue by available workstation-hours and also reports utilization and revenue per physical unit. For a useful trend, keep the definition of an available unit stable: production workstations should represent independently usable capacity, while available hours should reflect the time each unit could realistically operate.

How to use this calculator

  1. Choose one reporting period and collect all inputs for that same period.
  2. Enter the operating figures without sales tax or duplicated expenses.
  3. Select Calculate and review the main result with the supporting measures.
  4. Save the inputs with the period so later comparisons use the same definitions.

Formula

Revenue per available unit-hour = net revenue ÷ (available units × hours available per unit)

Scheduled utilization = used hours per unit ÷ available hours per unit × 100.

What the result means

The result normalizes revenue by workstation-hour capacity, making periods with different schedules easier to compare. Define an available unit the same way in every period.

This is an operating estimate. Accounting classifications and local practices may differ.

Example calculation

With $12,000 in revenue, 2 available units, and 40 hours per unit, there are 80 unit-hours. Revenue per available unit-hour is $150.00. If each unit was used for 30 hours, scheduled utilization is 75.00%.

Tips for better results

  • Compare like-for-like days, shifts, or accounting periods.
  • Document which expenses and sales channels are included.
  • Review unusual results against source reports before changing operations.
  • Track the measure over time instead of relying on one isolated result.
  • Pair the result with customer experience and quality observations.

Frequently asked questions

What counts as an available workstation-hour?

It is one usable unit available for one hour, whether or not it produces revenue during that hour.

Should closed hours be included?

No. Include only hours when the unit was realistically available for scheduled operation.

Can used hours be greater than available hours?

No. Expand available hours or revise the schedule first; used time cannot exceed the defined capacity.

Should sales tax be part of revenue?

Use net operating revenue excluding sales tax, refunds, and pass-through amounts.

Can I compare locations with different numbers of units?

Yes. Dividing by unit-hours normalizes the result, provided each location uses a comparable unit definition.
