For recipe and food-cost calculations, use the purchase unit you actually buy and the edible yield you actually serve. A kilogram purchased is not always a kilogram sold after trimming, cooking, or spoilage. For restaurant and hospitality metrics, keep room nights, covers, occupancy, revenue, and labor on the same reporting period.
Ingredient prices and demand can move quickly. Use current supplier costs for pricing decisions and revisit the calculation when menus, portion sizes, staffing, or occupancy patterns change. Food-safety rules and nutritional or allergen requirements should be checked against official guidance rather than inferred from a cost calculator.
