Formula

Turnover = total served ÷ available seats. Capacity utilization = total served ÷ (seats × service cycles) × 100.

What the result means

Turnover shows total throughput per seat across the period. Utilization adjusts that throughput for the number of service cycles.

A service cycle is one event or seating opportunity. Count only seats actually offered for that cycle.

Example calculation

With 600 served, 150 available seats, four service cycles, and $36,000 revenue, turnover is 4.00×, utilization is 100.00%, revenue per seat is $240, and 150 are served per cycle.
