Formula

Seat turnover = guests served ÷ available seats

Estimated seat-hour utilization = guests × average stay in hours ÷ (seats × hours open) × 100, capped at 100%.

What the result means

Seat turnover shows how many guests each available seat supported over the selected period. It does not reveal peak-hour queues, so use the utilization estimate and time-specific observations alongside it.

This is an operating estimate. Accounting classifications and local practices may differ.

Example calculation

Serving 240 guests with 40 seats over 8 hours produces 6.00 turns and 30 guests per hour. At a 45-minute average stay, estimated seat-hour utilization is 56.25%.

Include them only when they were open and usable during the full period; otherwise calculate separate periods.

Not unless they used a seat. This metric is intended to evaluate seating capacity.

Can I use transactions instead of guests?

Only if each transaction reliably represents one seated guest. Otherwise count covers or seated customers.

Why can peak periods feel full when utilization is moderate?

A daily average smooths out rushes and quiet periods, so it can hide short intervals at full capacity.

How should shared seating be counted?

Count each usable customer position as one seat and apply the same rule in every reporting period.
